¾ cup | Desiccated coconut |
1 | Egg, (white) |
¼ cup | Caster sugar |
1 tsp | Vanilla essence/extract |
1 to serve | Vanilla ice cream |

- Preheat oven to 180 degC.
- Place plums, cut-side-up, in a baking dish.
- Combine coconut, caster sugar, egg white and vanilla in a bowl and mix well.
- Spoon the mixture into the plums and bake for 15 minutes or until coconut mixture is golden.
- Serve warm with icecream.
