My girlfriend and I love cooking. I remember us experimenting with this one winter evening in the kitchen when she was visiting from Ashburton. We laughed and cried working out what was going to be a winner dinner. I think we cracked it!
Ingredients
500 kgs | Beef (Main) |
1 can | Tomato, Moroccan style |
1 cup | Dried apricots, and dates, chopped |
1 large | Onion |
1 clove | Garlic |
1 bunch | Chopped parsley |
1 tsp | Cumin |
1 tsp | Turmeric |
1 tsp | Smoked paprika |
1 Tbsp | Brown sugar |
2 Tbsp | Olive oil |
1 cup | Water |
1 cup | Butternut pumpkin, cubed |
Directions
- Preheat oven to 150. Pan fry beef in oil, add garlic and onion, chopped, stir and brown. Add spices, then tomatoes, pumpkin, water and chopped fruit. Sauté on low heat for ten minutes. Then transfer to casserole dish and bake on 150 for two hours.
- Serve on seasoned couscous, or rice, and sprinkle with chopped parsley. Add sour cream to garnish if desired. Great served with salad and sourdough.
