Ingredients
1 Tbsp | Lemon juice |
1 | Crusty baguette, cut into 4 lenghtways |
1 Tbsp | Soy sauce |
1 | Egg mayonnaise, for spreading |
1 | Carrot, thinly sliced |
1 | Lebanese cucumber, thinly sliced |
1 cup | Fresh coriander |
1 | Red onion, slliced |
Directions
- Heat oil in a non-stick frying pan over high heat.
- Add the chicken and lemongrass and cook, breaking up any lumps with a wooden spoon, for 4-5 minutes or until browned.
- Add the chilli sauce, lemon juice and soy sauce and cook for 30 seconds.
- Spread the baguette rolls with the mayonnaise and fill with the lemongrass chicken, carrot, cucumber, onion and coriander to serve.

TIP: Use a julienne peeler to cut thin slices of carrot, cucumber and onion.
