Ingredients
300 g | Scallops (Main) |
1 small | Onion |
2 tsp | Thai green curry paste |
2 tsp | Lemongrass |
1 can | Coconut cream |
1 squeeze | Lemon |
2 small | Limes |
2 Tbsp | Butter |
2 cups | Jasmine rice |
1 bunch | Fresh coriander |
1 sprinkle | Ground black pepper |
1 sprinkle | Sea salt |
1 splash | White wine |
Directions
- Fry onion in Butter, until soft,add Green Curry Paste,Lemongrass, . Stir for 3 minutes,add half can of Coconut cream.Bring to boil slowly simmer for 1 minute,simmer scallops in little white wine before adding to sauce mix then add ,Scallops and 2Tsp lemon Juice. Season with Salt and Pepper. add more coconut cream if not saucy enough. serve hot on a bed of rice ,decorate with Coriander and Lime Wedges. serves 4
