I have lost count how many times I have prepared this meal over the last 40+ years. I think it's tastes like,but better than, KFC. This week the chicken was on special at the supermarket, 5 thighs for $7. The vegetables (Kumara/potato mash,baby beets, baby turnips, pumpkin and spinach) were from the Cambridge Farmers Market, so all seasonal.
Ingredients
½ cup | Flour |
1 tsp | Salt |
¼ tsp | Pepper |
2 tsp | Paprika |
5 pieces | Chicken thighs (Main) |
100 g | Butter |
Lemon Sauce
1 dessert spoon | Dark soy sauce |
½ tsp | Salt |
½ tsp | Pepper |
2 tsp | Cooking oil |
⅓ cup | Lemon juice |
1 dessert spoon | Lemon rind, grated |
1 clove | Garlic, crushed |

Directions
- Combine flour, salt and pepper and paprika. Toss chicken in seasoned flour. Grease a large ovenproof dish and arrange chicken pieces in a single layer. Melt butter and spoon over chicken. Bake in hot oven for 30 minutes, then turn chicken pieces and spoon over lemon sauce. Return to oven with a lid on and bake for a further 30 minutes. Can also be done in a crockpot by browning in a pan first, cooking on low for four hours, the last hour - pour the sauce over. Won't be crunchy like when done in the oven but tasty all the same. Serve with seasonal vegetables.
- Lemon Sauce - Combine all ingredients and mix well. Refrigerate for one hour.
