This is an elegant delicious but really easy meal that always impresses dinner guests
Ingredients
2 | Lamb racks (Main) |
2 Tbsp | Olive oil |
3 cloves | Minced garlic |
1 Tbsp | Lemon zest |
2 Tbsp | Chopped parsley |
Crust
2 Tbsp | Horopito seasoning |
1 ½ Tbsp | Dijon mustard |
¼ cup | Wholegrain breadcrumbs |
Directions
- Mix the olive oil, garlic, lemon zest, pepper and parsley together and rub into the lamb racks - coating thoroughly. Refrigerate for at least 1 hour, preferably longer.
- Preheat oven to 180 degrees
- Place lacks in baking tray. Mix horopito and mustard together with the breadcrumbs and press into the upper part of the rack
- Bake for approx 15-20 minutes until it is cooked to your liking
