Delicious minty lamb with salad greens, filling, healthy and wholesome!
Ingredients
2 | Lamb steaks (Main) |
2 | Kumara |
3 handfuls | Salad greens |
1 | Red onion |
1 | Carrot |
2 | Chopped tomatoes |
1 | Avocado |
100 g | Feta |
10 g | Olive oil |
6 leaves | Fresh mint |
Directions
- Mix together salad ingredients, including mint and mint sauce if you have some handy with a dash of olive oil, balsamic vinegar and lemon juice. Place in salad bowl and set aside.Peel, cube and fry kumara in olive oil and salt and pepper on the stove top. While kumara is cooking heat BBQ and cook lamp steaks allowing time for meat to rest before slicing.Place salad greens in individual serving dishes, top with kumara, crumbled feta and slices of lamb. Add dressing to your taste. Yum!!
