This is a Kumara dish with a difference. Easy to make and always gets comments when served
Ingredients
1 kg | Kumara (Main) |
2 large | Eggs |
50 g | Butter, plus 2 Tbsp extra |
1 cup | Canned crushed pineapple |
1 cup | Grated cheese |
1 Tbsp | Brown sugar |
½ tsp | Nutmeg |
1 cup | Cornflakes |
Directions
- Peel and boil the kumara. Mash with 50g butter. Beat eggs and add with the pineapple to the kumara. spoon into a 16cm dish.
- Topping: Melt 2 tablespoons butter and add to combined cornflakes, cheese, brown sugar, nutmeg and sprinkle over kumara. bake at 180 deg C for 30 minutes. Enjoy!
