This simple vegetable salad is a refreshing accompaniment to Indian curries and meat dishes. Try it with Laurie Black's tandoori lamb cutlets with ginger raita.
Ingredients
| ¾ | Telegraph cucumbers, deseeded and cut in 1.5cm dice (Main) |
| 3 | Tomatoes, cut in 1.5cm dice |
| ½ small | Red onions, thinly sliced |
| ½ | Red chillies, finely diced |
| 2 Tbsp | Fresh mint |
| 2 Tbsp | Fresh coriander |
| 1 | Lime, freshly juiced |
Directions
Toss all kachumba ingredients together and season with a little salt.
