Serve with cakes, pavlova or scones, as a breakfast compote, or as a side to barbecued meats and fish.
Ingredients
| 1 kg | Stonefruit, cut into even chunks; choose a mix of white and yellow peaches, nectarines and apricots (Main) |
| ¼ cup | Caster sugar |
| ½ bottle | Gingerella |
| 1 | Lemon, zested and juiced, or use a small grapefruit |
| ¼ piece | Cinnamon sticks |
| ¼ tsp | Spice mix, use your favourite |
| 1 | Kaffir lime leaf, use up to 2 leaves or use bayleaves |
Directions
- Gently simmer until the liquid has reduced and the fruit is soft and jammy. Remove aromatics, jar and seal, then refrigerate when cool.
