Warren Elwin has taken liberties, twisting the gremolata idea to create toppings to add a healthy zing and maybe a bit of crunch to almost anything.
|1 handful||Fresh coriander, finely chopped|
|1 to taste||Chilli, finely minced or pickled|
|1||Lime, freshly zested|
|5||Olives, finely chopped, optional|
|½||Red onions, finely chopped, optional|

- Mix the coriander and with chillies and lime zest. Optionally add olives and red onion.
- Serve with fish tacos, cheese enchiladas, or liven up mince dishes, scrambled eggs, and pizza just before serving.
