Warren Elwin has taken liberties, twisting the gremolata idea to create toppings to add a healthy zing and maybe a bit of crunch to almost anything.
Ingredients
| ½ cup | Walnuts, or pecans or hazelnuts (Main) |
| 1 | Orange, freshly zested, or use a grapefruit |
| 1 handful | Chervil, chopped |
| 1 Tbsp | Fresh ginger, finely chopped |
Directions
- Blitz walnuts (or pecans or hazelnuts) to a crumb and mix with the orange or grapefruit zest, chervil and ginger.
- Serve sprinkled on salads (shaved fennel or jerusalem artichoke), with roast chicken and pork chops.
