- Preheat oven to 190 degC. Place the lamb (trimmed leg steaks) in a large roasting pan. Mix together the tomatoes, chopped garlic, olive oil, oregano and measured stock and pour this mixture over the lamb.
- Season with salt and pepper and place in the oven. Bake for 1 hour, turning meat once during cooking.
- Remove from the oven and stir in the orzo pasta and water.
- Return to the oven and reduce the temperature to 170 degC. Bake for a further 20 to 30 minutes, stirring occasionally, until pasta is al dente (tender to the bite). Adjust seasoning to taste.
