A lovely way to use up our surplus grapefruit
Ingredients
1 large | Grapefruit, juice and rind |
1 Tbsp | Golden syrup |
2 Tbsp | Butter |
¾ cup | Sugar |
1 cup | Self raising flour |
1 medium | Egg |
½ cup | Water |
Directions
- Put juice and golden syrup into a 6 cup pudding bowl in which the pudding is to be cooked.
- Stand the basin in hot water to melt the golden syrup.
- Rub the butter into the four, add sugar and grated rind.
- Beat the egg and water together and stir in.
- Tilt the basin to coat the sides with syrup and pour in the batter. Do not mix with the syrup. Cover and steam 1 hour.
