Making fresh gnocchi is so rewarding but buying a good quality packet version for this recipe is fine. Simply toss it into a fresh mix of vegetables and blue cheese for a creamy hit.
Ingredients
| 1 Tbsp | Olive oil | 
| 20 g | Butter | 
| 2 | Spring onions, sliced | 
| 2 | Garlic cloves, crushed | 
| 2 rashers | Streaky bacon, chopped (Main) | 
| ½ | Red peppers, sliced thinly | 
| 1 cup | Green vegetable, sliced thinly (Main) | 
| 2 cups | Kale, shredded (Main) | 
| ¼ cup | Sage, leaves only, shredded | 
| 100 g | Blue cheese, crumbled (Main) | 
| 200 g | Potato gnocchi, store-bought, cooked (Main) | 
Directions
- Heat the oil and butter in a frying pan. Add the spring onions, garlic, bacon, red pepper and green vegetables, cooking for 3 or 4 minutes until softened. Add the kale and sage leaves, allowing to wilt for 2 minutes.
- Toss through the blue cheese and gnocchi to heat through.
- Serve hot with extra sage leaves to garnish.
