Ingredients: 1 cup LSA (Linseed, Sunflower and Almond mix), Or ground almonds; 3 Tbsp Rice flour; 2 tsp Ground cinnamon; 2 Tbsp Sunflower seeds, Optional; ½ tsp Baking soda; 1 pinch Salt; ¼ cup Coconut oil, Melted; 2 Tbsp Honey, Melted; 3 Eggs; 2 Apples, Grated (Main)

This muffin recipe uses simple, inexpensive ingredients for those with allergies or looking for a healthier, more nutritious baking option for lunch boxes or with a cup of tea.

1 cup	LSA (Linseed, Sunflower and Almond mix), Or ground almonds
3 Tbsp	Rice flour
2 tsp	Ground cinnamon
2 Tbsp	Sunflower seeds, Optional
½ tsp	Baking soda
1 pinch	Salt
¼ cup	Coconut oil, Melted
2 Tbsp	Honey, Melted
3	Eggs
2	Apples, Grated (Main)

Preheat oven to 180 degrees. In a bowl, mix the flours, baking soda, cinnamon, salt and seeds.
Add the eggs, apple, honey & coconut oil and mix well.
Spoon the mixture into a greased muffin tray and bake for 20-30mins (depending on size of muffin tins) or when a skewer comes out clean.
Remove from tray, cool on a wire rack and enjoy!
