|1 Tbsp||Golden syrup|
|1 ¾ cups||Flour|
|1 tsp||Baking powder|
|½ tsp||Baking soda|
|3 tsp||Ground ginger (Main)|
|¼ cup||Crystallised ginger (Main)|

- Preheat oven to 180 degC. Beat butter and sugar until pale and creamy. Add egg and mix well.
- Add golden syrup and mixed dry ingredients along with chopped crystallised ginger.
- Roll into balls about the size of a walnut and place on a cold oven tray - do not flatten.
- Bake for 15 to 20 minutes until dark golden.
