- Place water, juice from two lemons and honey in a small saucepan and bring to the boil. Boil for 2 to 3 minutes to form syrup.
- Place egg yolks only and sugar in a bowl and whisk for 2 minutes. Pour on the hot syrup, little by little, whisking all the time. Continue to whisk until the mixture is thick and pale and has cooled (this will take 10 minutes). Stir in the brandy and fold in the whipped cream.
- Place mixture in four dessert glasses and freeze for at least 3 hours, until set. Serve with fresh, seasonal fruit of your choice, such as diced kiwi fruit.
Tip: These frozen parfaits will last up to a week if covered and stored in the freezer. They can be easily made in advance if necessary.
