Ingredients
| 3 Tbsp | Olive oil |
| 2 | Chorizo sausages, sliced on a diagonal (Main) |
| 2 | Fresh fennel, slice thinly lengthways (Main) |
| 1 | Onion, thinly sliced |
| 4 | Garlic cloves, sliced |
| 200 g | Potatoes, parboiled and cut into small pieces (Main) |
| 1 | Lemon, zest & juice |
| ¼ cup | Flat leaf (Italian) parsley, chopped |
Directions
- In a large frying pan heat 1 Tbsp oil to a medium heat, then add the chorizo and cook for 1-2 minutes until slightly brown. Remove from the pan.
- Add the rest of the oil, fennel, onions and garlic, and fry for 5-8 minutes until softened.
- Add the potatoes and chorizo. Cook slowly, turning gently for about 5 minutes. Add the lemon.
- Sprinkle with chopped parsley and serve.
