“Can you bring something sweet?” How often do we hear this last-minute, stress-inducing, request the night before! Well this indulgent, fancy, truffle-like, flourless cake is the answer. Of course you won’t say anything over the phone other than “I’ll see what I can do”.
Ingredients
| 225 g | Dark chocolate, (55-70% cocoa solids) (Main) |
| 160 g | Butter |
| 6 | Eggs |
| 140 g | Brown sugar |
| 140 g | Caster sugar |
| 2 Tbsp | Dutch cocoa powder (Main) |
| 125 g | Ground almonds |
Directions
- Heat oven to 180C. Line a 23cm springform cake tin with baking paper.
- Place chocolate and butter in a bowl and simmer over a pot of water until melted.
- Whisk the eggs and sugars together until light, fluffy and triple in size.
- Gently fold in the melted chocolate, cocoa and almonds. Pour into the tin and bake for 45 minutes. Allow to cool in the tin. Dust with cocoa or icing sugar.
