Easy chicken curry satay

With a busy family, this is a favourite dish because it's so tasty, so quick and very versatile. The sauce can be served over chicken/ beef/ vegetables/ rice/noodles, whatever's in the fridge or just served with a side salad. We make with a thermomix but can be made on stovetop too.

Ingredients

1	Onion, Chopped
2	Garlic cloves, Chopped
30 g	Olive oil
120 g	Peanut butter
200 g	Water
1 cube	Chicken stock
90 g	Honey
40 g	Wholegrain mustard
2 tsp	Curry powder
2 dashes	Tabasco sauce
2 pinches	Ground cardamom
500 g	Skinless chicken thighs (Main)

Directions

1. Sauté onion garlic in oil
2. Add all other ingredients to pan and cook while stirring on low/medium heat until chicken is cooked and sauce slightly thickened ( 10 -12 mins )
3. Serve with some steamed vegetables and rice or with side salad
