|2 cups||Blueberries, New Zealand sourced, fresh or frozen (thawed) (Main)|
|½||Onions, medium, diced|
|1||Jalapeno pepper, seeded and minced (add more to taste)|
|3 Tbsp||Parsley, or coriander, chopped|
|1||Red pepper, medium, diced|
|¼ cup||Lime juice, or lemon juice|
- Combine all ingredients, folding in blueberries last.
- Refrigerate one hour or more to blend flavours.
- Serve with baked pita chips or use as a relish with seafood, meat or poultry dishes.
