Always a winner and have received wonderous comments from all those who have tried this delightful dessert. A very quick and delicious dessert. I make it for dinner parties and also as a weekday treat.
Serve with fresh whipped cream, ice-cream and seasonal fresh fruits.
Ingredients
| 2/5 cup | Self raising flour |
| ½ tsp | Baking powder |
| 2/5 cup | White sugar |
| ¾ cup | Desiccated coconut |
| 1 ½ cups | Light coconut cream |
| 3 whole | Eggs |
| 75 g | Butter |
| 1 tsp | Vanilla essence/extract |
Directions
- Melt butter.In a blender place all ingredients.
- Blend for about 1 to 2 minutes or until mixed well.
- Pour into shallow pie dish (buttered) approx. 21cm size.
- Bake at 200 degrees C (In a preheated oven) for 25 to 30 minutes or until set.
- Serve hot or cold with fresh fruit, whipped cream, ice-cream or yoghurt.
