Homemade chutney makes a great gift. Make your own labels and jar covers and give these away as presents.
|250 g||Dried apricots (Main)|
|250 g||Dates, pitted and dried (Main)|
|2 Tbsp||Ginger, grated, fresh|
|1 clove||Garlic, finely chopped|
|1 cup||Light muscovado sugar, packed|
|1 ½ cups||Raisins|
|2 ¼ cups||White wine vinegar|

- Place the apricots and dried dates in a large bowl and cover with cold water. Soak overnight. Drain well and then place in a large saucepan.
- Add the ginger, garlic, sugar, raisins and vinegar. Bring to the boil, stirring frequently to dissolve sugar. Reduce the heat and simmer for 1 to 1.5 hours until the mixture is thick.
- Pour into warm, sterilised jars and seal.
Cook's tips: Serve chutney with cold meats, sausages, bread or simply with cheese and crackers.
