Curry mince on silverbeet mash

Its cheap, wholesome and I haven't had one child ever complain about eating it! Loved by adults and children, easy to make, easy to eat perfect for tired worn out kids.

Ingredients

500 gBeef mince (Main)
5Potatoes, cut into even sized pieces
1Onion, finely chopped
1 bunchSilverbeet, finely cut
2 TbspBeef gravy powder
30 gButter
1 TbspCurry powder, or to taste
2 pinchesSalt, or to taste
2 pinchesPepper, or to taste
4 tspChicken stock
1 cupMilk

Directions

  1. In a large pot put washed (AND PEELED IF LIKE) chopped potatoes, add a pinch of salt. Fill till nearly covered with water and put on element to boil. Once boiling reduce heat and cook for 10-15 minutes until soft.
  2. While potatoes are cooking put large deep fry pan on element to heat. Add knob of butter. Once butter melted add chopped onion and stir until clear. Add mince to pan with onions and continue to stir to ensure it breaks up and is lump free. Keep stirring until juice evaporates and mince begins to brown. Add curry powder, salt, pepper and tsp of chicken stock. Stir. In a cup put two tablespoons of Bisto gravy powder, add some water and mix to a paste, pour this into the mince add a total of 1 1/2 cups of water stir through mince mixture, turn to low and let simmer until sauce thickens. (You may need more or less stock or water)
  3. Once potatoes are ready, drain water and return to element (turn off element). Wash and finely chop the bunch of silver beet, leaving out the thick white stems. Add washed and chopped silverbeet on top of cooked potatoes. Add knob of butter and up to a cup of warm milk to potato pot. Put lid on and let residual heat steam silverbeet and melt butter. Add salt and pepper if needed. Mash potato mixture together until light and fluffy.
  4. Serve dollop of silverbeet and potato mash onto plate and spoon over generous serve of curry mince. Enjoy.
