Ingredients
1 Tbsp | Butter |
4 | Duck legs (Main) |
2 small | Brown onions, peeled and quartered |
2 cloves | Garlic, peeled and roughly chopped |
1 pinch | Flaky sea salt |
½ | Lemons, zested and juiced |
1 bunch | Sage, roughly torn |
2 Tbsp | Olive oil |
Directions
- Preheat oven to 190C.
- In a large frying pan, heat the butter to a medium-high heat and place the duck legs skin side down to crisp up the skin. This should take about 5 minutes.
- In a roasting dish, add the duck, skin side up, with the onions and garlic. Sprinkle over the salt, add the lemon zest, and squeeze over the juice. Add the sage, ensuring each leg is covered well, and drizzle over the olive oil.
- Roast for approximately 35-40mins until the duck is golden and crisp. You may need to increase the heat slightly at the end. Remove from the oven, and serve.
