Think of coffee as more than a shot of caffeine and use it as an ingredient in baking, desserts and cocktails.
Ingredients
| 70 g | Unsalted butter |
| ¼ cup | Caster sugar |
| 1 | Egg |
| 2 Tbsp | Golden syrup |
| 1 cup | Flour |
| 1 Tbsp | Ground ginger (Main) |
| 1 pinch | Salt |
| ¼ cup | Milk |
| ½ cup | Coffee, strong (Main) |
| 1 tsp | Baking soda |
Directions
- Heat gem iron in oven at 200C. Cream butter with caster sugar until pale and fluffy. Beat egg into mixture, then fold in golden syrup.
- Sift in flour, ground ginger and a pinch of salt and fold through.
- Heat milk with strong coffee. Whisk in baking soda then fold quickly into creamed mixture.
- Add pinches of butter to the hot gem iron and spoon the mixture evenly into the sizzling butter. Bake for 15 minutes, or until golden and well risen.
