Ingredients
| 1 tsp | Baking powder |
| 1 ½ cups | Flour |
| ¼ tsp | Baking soda |
| ½ tsp | Salt |
| ½ cup | Caster sugar |
| ½ cup | Grapeseed oil |
| 2 | Eggs, lightly beaten |
| ½ cup | Buttermilk |
| ½ cup | Desiccated coconut (Main) |
Directions
- Preheat the oven to 180 degC. Lightly grease and line a loaf tin.
- In a bowl stir together the flour, baking powder, baking soda and salt.
- In a second bowl, whisk together the sugar, oil and buttermilk.
- Using a large bowl, alternately mix together the wet and dry mixes then fold through the coconut.
- Bake for approximately 40 minutes or until an inserted skewer is removed clean.
