- Heat oven to 160 degC. Line two baking trays with nonstick baking paper. Place softened butter and sugar in a bowl and beat until pale and creamy. Beat in the egg. Sift the flours and baking soda over the creamed mixture and then stir to combine into a dough.
- Transfer dough to a floured surface and knead briefly to bring together. Wrap in plastic wrap and refrigerate dough for 30 minutes until firm.
- Combine sugar and cinnamon in a small bowl. Roll tablespoons of dough into balls, then roll the balls in cinnamon-and-sugar mix.
- Gently press balls to slightly flatten and place onto prepared baking trays. Bake for 10 to 12 minutes or until golden brown. Remove to wire racks to cool.
