Serves 4 as a side to Indian meals.
Ingredients
| 1 small | Red onion, finely chopped |
| 1 | Telegraph cucumber, finely chopped (Main) |
| 3 | Tomatoes, finely chopped (Main) |
| ½ cup | Fresh coriander, finely chopped |
| ¼ tsp | Ground chilli |
| 1 ½ Tbsp | Lemon juice |
| 2 tsp | Vegetable oil |
| ¾ cup | Peanuts, roasted, blanched and roughly chopped |
| 1 tsp | Sea salt |
| ½ tsp | Black pepper |
| 1 ½ tsp | Garam masala |
Directions
Toss all ingredients into a bowl and mix until combined. Serve immediately.
