I have used beetroot jam as a topping on these bagels. Store bought is fine, otherwise make it yourself using my recipe here. The same goes for marinated peppers which you can also buy or make yourself.

Ingredients

2Abe's Super Supreme Sesame Bagels, split, lightly toasted and buttered (Main)
2 servingsDijon whole grain mustard, for spreading
2 servingsBeetroot jam, for spreading; store bought or see link to recipe above
4 slicesHam on the bone (Main)
1 jarMarinated peppers, use as many as needed; otherwise roast and marinate some yourself - see link above for recipe (Main)
1 handfulRocket leaves

Directions

  1. Lightly toast and butter the bagels. Spread one side with seed mustard and the other with beetroot jam. Top with slices of ham, marinated peppers and fresh rocket. Season with sea salt flakes and freshly ground black pepper.
