Use leftover chicken or for ease, buy a cooked chicken to make this tasty and healthy chicken salad.
|200 g||Chicken, diced and pre-cooked (Main)|
|½ cup||Red cabbages, shredded|
|2 handfuls||Lettuce, chopped|
|¼ cup||Spring onions, chopped|
|½ cup||Corn kernels, cooked, or corn from 1 ear|
|½ ||Red capsicums, chopped|
|1 cup||Couscous, use Israeli couscous, prepare according to directions on the packet|
|¼ cup||Tasty cheese, finely grated|
|1 cup||Dried cranberries, chopped|
|2 Tbsp||Pecans, finely chopped|
Sweet basil dressing
|1 cup||Basil, roughly chopped|
|½ cup||Olive oil|
|3 tsp||Lemon juice|
|1 Tbsp||Mayonnaise, low fat|
- In a bowl large enough for tossing salad, add all the salad ingredients and set aside.
- Combine olive oil, basil, lemon juice, honey, water and mayonnaise in a food processor until smooth.
- Pour over the salad, toss gently, season with salt and pepper and serve immediately.
