Traditionally served on grilled meat, chimichurri is similar to pesto in that it's made by blitzing fresh herbs with garlic, olive oil and seasoning. Serve it with this chargrilled skirt steak and crisp potatoes.
|1 cup||Fresh parsley (Main)|
|1 ½ cups||Fresh coriander (Main)|
|½ cup||Fresh oregano|
|1 Tbsp||Ground cumin|
|1 pinch||Chilli flakes|
|100 ml||Olive oil|
|50 ml||Red wine vinegar|

- Place all the ingredients in a food processor and blitz until a roughish paste.
- Taste and season with sea salt and freshly ground black pepper. Refrigerate until required.
