I created my own satay curry sauce which turned out to be fabulous! It uses random ingredients in your cupboard but totally comes together perfectly!
Ingredients
| ¼ cup | Tomato sauce |
| 2 Tbsp | Peanut butter |
| 1 tsp | Curry powder |
| ½ tsp | Chilli powder |
| 0 pinches | Chilli flakes |
| 0 dashes | Fish sauce |
| 1 | Lemon |
| ½ can | Coconut milk |
| ½ cup | Water |
| 0 | Salt & freshly ground pepper |
| 1 large | Chicken breast (Main) |
| 1 cup | Green beans |
Directions
- Squeeze juice from lemon and mix with all the sauce ingredients in a pot and bring to a gentle boil.
- Meanwhile cut the chicken breast into bite sized pieces and measure out the green beans. (I used frozen sliced green beans).
- Add the chicken pieces to the sauce and cook until the chicken is tender.
- Add in the green beans and cook until heated through but still firm and bright green. Taste and season accordingly. Serve immediately.
