It captures the essence of summer in the freshness of the basil from my garden.
Ingredients
| 6 slices | White sandwich bread, Or multigrain |
| 2 Tbsp | Mayonnaise |
| 3 Tbsp | Basil leaves, Chopped |
| 3 Tbsp | Pine nuts |
| 50 g | Cooked chicken, Chopped (Main) |
| 1 pinch | Salt & freshly ground pepper |
Directions
- Cut crusts from bread (Reserve them for making breadcrumbs or meatballs ) Mix other ingredients and spread over bread. Make 3 rounds of sandwiches. Cut into fingers. Serve on a bed of lettuce to keep moist. Garnish with paprika.
