This is a wonderful quick (non meat) rice dish which features Mussels as the hero of the dish but you can make your favourite seafood the stand-out. I made my own Marinara mix from Prawns, a little salmon (50gms) and Surimi (50gms) but this is very successful with pre-packaged frozen or supermarket fresh
Ingredients
500 g | Mussels |
250 g | Seafood marinara mix |
1 whole | Onion, chopped |
2 Tbsp | Vegetable oil |
2 cups | Basmati rice (Main) |
3 cups | Fish stock, (or water) |
1 can | Crushed tomatoes, in puree |
2 tsp | Curry powder |
1 tsp | Smoked paprika |
1 cup | Frozen peas |
1 whole | Chilli pepper, optional |
seasoning
1 tsp | Salt, to taste |

Directions
- Heat the oil in a large pan and add the curry powder and smoked paprika,and (optional chilli) gently stir then add the onions and rice stir to combine. Add the fish stock or water and cover and simmer on low for about 10 minutes. Uncover and add the tomatoes and mussels stir and recover for 10 minutes.
- check that the rice is soft and the mussels are cooked. Add the marinara and peas, stir through, the residual heat will cook this without overcooking.
- This is a great serve yourself meal and can be served straight from the pan. Add chopped parsley, lemon or anything that makes this your family's special dish.
