Ingredients
| 1 punnet | Cherry tomatoes (Main) |
| 1 | Finely chopped spring onion, use 2 if you like |
| 1 splash | Extra virgin olive oil |
| 1 splash | Red wine vinegar |
| 1 | Lemon, zest and juice, use as much as liked to season |
| 2 | Abe's Bagels, use Natural or Super Sesame, halved (Main) |
| 1 whole | Fresh mozzarella, sliced (Main) |
| 1 handful | Micro herbs, or fresh chervil or parsley |
| 1 drizzle | Basil oil |
Directions
- Preheat oven to 200C. Toss cherry tomatoes and spring onion with a splash of olive oil and red wine vinegar. Roast until they blister.
- Remove, season with sea salt flakes, freshly ground pepper and lemon zest and juice to taste. Split, lightly toast and butter 2 bagels. Top with slices of fresh mozzarella, the cherry tomatoes, some micro greens or fresh chervil or parsley, and drizzle with a little basil oil to serve.
