Cajun-spiced lamb wraps

Ingredients

2 TbspOlive oil
2 tspCajun spice
2Lamb leg steaks (Main)
4Tortilla wraps, warmed
4 TbspHummus
4 piecesRed capsicums, marinated (from a jar), chopped
1 handfulFresh coriander, roughly chopped
1 handfulSalad greens
1Lemon, juice

Directions

  1. Mix the Cajun spice with 1 tbsp olive oil in a shallow dish. Add the lamb and coat with the paste.
  2. Heat the remaining oil in a frying pan. Add the Cajun lamb and fry for 4 minutes on each side until just cooked - it should be slightly pink in the middle.
  3. Meanwhile, spread one side of each tortilla with the hummus. Top each with the capsicum, coriander and mixed leaves.
  4. When the lamb is cooked, slice into thin strips. Squeeze over the lemon, then divide among the wraps. Roll up and serve.
