Ingredients
| 2 Tbsp | Olive oil |
| 2 tsp | Cajun spice |
| 2 | Lamb leg steaks (Main) |
| 4 | Tortilla wraps, warmed |
| 4 Tbsp | Hummus |
| 4 pieces | Red capsicums, marinated (from a jar), chopped |
| 1 handful | Fresh coriander, roughly chopped |
| 1 handful | Salad greens |
| 1 | Lemon, juice |
Directions
- Mix the Cajun spice with 1 tbsp olive oil in a shallow dish. Add the lamb and coat with the paste.
- Heat the remaining oil in a frying pan. Add the Cajun lamb and fry for 4 minutes on each side until just cooked - it should be slightly pink in the middle.
- Meanwhile, spread one side of each tortilla with the hummus. Top each with the capsicum, coriander and mixed leaves.
- When the lamb is cooked, slice into thin strips. Squeeze over the lemon, then divide among the wraps. Roll up and serve.
