This tasty and versatile recipe makes a healthy breakfast, lunch or nibble to serve with drinks.
Ingredients
| 2 cups | Broad beans (Main) |
| 1 clove | Garlic, use up to 2 cloves |
| 1 tsp | Sea salt |
| 1 handful | Chopped mint (Main) |
| 1 splash | Extra virgin olive oil |
| 1 | Lemon, zest and juice |
| 4 slices | French bread, brushed with olive oil and grilled (Main) |
| 4 slices | Goat's cheese, or torn pieces of mozzarella (Main) |
Directions
- Blanch broad beans, refresh in ice cold water, drain and peel away the skins.
- In a mortar and pestle, crush garlic with the salt and roughly chopped mint to form a paste. Crush broad beans into the mix, a handful at a time, leaving the last handful somewhat whole, for texture. Remove to a bowl, add a glug of olive oil, a good grind of black pepper, the zest and juice of a lemon and fold together. Chill.
- Serve on the grilled french bread slices. Top with goat's cheese or torn pieces of mozzarella.
