This is great over icecream or yoghurt, and over pancakes. It would be good with mini pavlovas and whipped cream too. Once it’s cooled, you could use it in cocktails, too.

- Place all ingredients in a small saucepan and bring to the boil, stirring to ensure the sugar dissolves.
- Reduce to a simmer, and cook until the liquid has reduced — about 15 minutes.
- Will keep in the fridge for about a week.
