A lighter take on the classic BLT, these are great for breakfast or lunch. Swap the feta for your favourite cheese.
Ingredients
2 | Spinach wraps |
¼ cup | Mayonnaise |
2 handfuls | Lettuce leaves, mixed, and herbs |
4 slices | Streaky bacon, dry-cured, pan-fried to your liking (Main) |
4 slices | Feta |
6 slices | Avocados |
6 | Vine-ripened tomatoes, or 8 |

- Spread the wraps generously with mayonnaise.
- Arrange the lettuce across the centre, and top with crispy bacon rashers.
- Then add feta, avocado slices and tomato wedges.
- Season well and wrap up firmly.
