Use two types of cheese in these man-sized toasties – the cheddar for its rich nutty flavour and the Havarti, which melts beautifully. Remember to achieve the untimate golden crust when making these sammies, butter is your friend!
|50 g||Butter, softened|
|8||Toast bread slices, thick (Main)|
|2 Tbsp||Sour cream|
|1 Tbsp||Wholegrain mustard|
|4 slices||Smoked ham, thick cut|
|4 slices||Cheddar cheese, thick|
|¼ cup||Havarti cheese, smoked, grated|

- Butter one side of the bread slices generously.
- Combine sour cream and mustard, and spread over the unbuttered side of each slice.
- Top 4 slices with the ham and cheeses, then sandwich with remaining slices.
- Preheat a heavy nonstick or cast-iron pan and sear sandwich for 3-4 minutes each side over a gentle heat until well toasted and cheese begins to ooze.
