I think its really tasty with Kumara chips, fresh herbs from my garden ,nuts and two water cracker biscuits for a twist...
Ingredients
| 1 piece | Beef roast, prime cut (Main) |
| 2 small | Crackers, I used Arnotts water crackers |
| 1 dozen | Pistachio nuts |
| 1 dozen | Cashew nuts |
| 40 g | Kumara chips / wedges |
| 1 sprinkle | Flour |
| 2 leaves | Bay leaves |
| 1 sprig | Rosemary |
| 1 sprig | Fresh oregano |
| 1 pinch | Salt |
| 1 pinch | Pepper |
| 1 Tbsp | Sesame oil |
| 1 clove | Garlic |
Directions
- Preheat oven to 160
- Place fresh Bay leaves in the bottom of an oven bag
- Roll beef in oil,finely chopped garlic and rosemary,salt and pepper
- Crumble Kumara chips,process water crackers,oregano,pistachios,cashews
- Place beef in oven bag coated with crumble mixture and cook for 40 minutes,remove bag and grill until crust is golden brown, serve with roasted potato and minted peas ...
