This is my take on a Japanese classic dish. Which will warm you up both inside and out. It will make you cry for joy. It will uplift you and make you want to do anything you want to do. In fact it will give you so much energy you’l be wondering where it’s all coming from! You will be shouting out Ramen!!!

Ingredients

2 largeSirloin steaks (Main)
1 TbspOlive oil
250 gNoodles, ramen style (Main)
1 LtrBeef stock
2 TbspTeriyaki sauce
2 TbspChilli sauce
1 TbspFish sauce
1 TbspSoy sauce
150 gBean sprouts
6Shiitake mushrooms
1 handfulSpinach
3Spring onions, chopped
2Red chillies, chopped
1Onion, chopped
3 clovesCrushed garlic
1 inchCrushed ginger
1Salt and pepper, to taste

Directions

  1. Blanch the beansprouts and spinach in boiling water in two separate bowls, drain and refresh in cold water.
  2. Season the steaks with salt and pepper on both sides. In a fairly large pot, heat olive oil (2-3 tbsp) on medium heat until hot. Cook the steaks for 2-4 minutes per side, or until it reaches your desired level (medium rare is nice, but it's totally up to you). Once you've cooked it to your desired level, transfer the steak to a plate, leaving any drippings in the pot. Let the steak rest for at least 5 minutes or until cool. Now brush the steak with teriyaki sauce and slice the steaks diagonally.
  3. Using the same pot as the steak with its left over drippings, add 2 tbsp of olive oil and heat on medium heat until its hot. Add the spring onions, onions, garlic, ginger and chillies cook until its nice and fragrant, and slightly softened. Make sure you are stirring the pot frequently. Now add the mushrooms, spinach and beansprouts and season with salt and pepper. Cook until the spinach is wilted.
  4. Now increase the heat to high heat. Slowly add, the beef stock, chilli sauce, fish sauce and soy sauce. And bring this to a boil, then reduce the heat to medium and let it simmer so that it develops all these wonderful flavors.
  5. As your broth is doing its thing, its time to prepare your noodles. To a large pot of boiling water, add the ramen noodles and cook until the noodles are tender, stir to prevent them from sticking to the pot. Drain the noodles thoroughly.
  6. And there you go guys, you are now ready to serve up. To plate your dish, place the noodles first and pour in the soup and lay the coated steaks on top. Garnish this with fresh coriander and lime wedges on the side (lime is optional).
