This is so simple and easy for a summer BBQ but what elevates it to special is the chimichurri sauce.
Ingredients
| 1 cup | Flat leaf (Italian) parsley |
| 4 cloves | Minced garlic |
| 1 tsp | Salt |
| 1 tsp | Minced chilli |
| 1 tsp | Cracked black pepper |
| 3 Tbsp | Lemon juice |
| ¾ cup | Olive oil |
| 3 Tbsp | Red wine vinegar |
| 2 Tbsp | Oregano |
| 4 | Beef medallions, Silver Fern Farms (Main) |
| 2 Tbsp | Olive oil |
| 1 tsp | Salt & freshly ground pepper |
Directions
- Have medallions at room temperature rub oil in each side and season with salt and pepper. Preheat BBQ
- Place all chimichurri ingredients and quickly pulse - do not puree
- Cook medallions on BBQ 2-3 mins each side and serve with delicious chimichurri sauce and lightly charred flatbreads for dipping into the extra sauce.
