|6 cups||Vegetable stock (Main)|
|⅓ cup||Barley (Main)|
|⅓ cup||Dried split yellow peas|
|¼ cup||Fresh parsley|

- Place all ingredients, except the parsley, in a saucepan and bring to the boil. (all diced)
- Turn down heat and simmer soup gently for 1 hour, stirring occasionally, until the barley is soft.
- Season with salt and pepper to taste and stir in the parsley. Serve with crusty bread on the side.
