A sweet pink cupcake perfect for a princess's birthday party.
|1 ½ cups||Sugar|
|1 tsp||Vanilla essence/extract|
|2 ½ cups||Flour|
|1 tsp||Baking powder|
|1 tsp||Baking soda|
|2 ½ cups||Icing sugar|
|3 drops||Food colouring|
- Heat oven to 160 degC fan bake. Line two 12-hole standard muffin tins with paper cases. Place butter, sugar and vanilla in a bowl and beat with an electric mixer until pale and creamy.
- Beat in mashed bananas, then beat in eggs, one at a time. Sift dry ingredients together and fold into mixture, alternating with the buttermilk. Stir just enough to combine into a creamy batter.
- Three-quarter fill prepared cases. Bake for 20 to 25 minutes or until a skewer inserted into the middle of a cupcake comes out clean. Place on a wire rack to cool.
- Decorate with piped frosting. To make frosting, beat ingredients together, adding just enough boiling water to bring the mixture together until stiff and creamy.
