A colourful salsa livens up this fish dish and gives it a real flavour injection.
Ingredients
500 g | Spinach (Main) |
4 pieces | Fish fillets (Main) |
1 | Olive oil |
1 to taste | Ground black pepper |
½ cup | Sun-dried tomatoes |
½ cup | Black olives |
¼ cup | Fresh parsley |
1 | Lemon |

- Heat oven to 220C.
- Arrange spinach in the base of a lightly oiled ovenproof dish. Place fillets of fish on top. Drizzle all over with olive oil and season well with pepper.
- Bake for 20 to 30 minutes (depending on thickness of fish) or until fish is cooked and lightly golden brown.
- At the same time, combine sun-dried tomatoes, olives, parsley(all well chopped) and lemon juice to make a salsa.
- Serve fish on a bed of spinach and top with a generous amount of salsa.
