When time is short, using frozen ingredients is essential. This tasty lamb dish is simple and quick to prepare.

- Heat oven to 200C. Cut lamb racks into portions, each with two bones to give double cutlets. Season lamb with salt and pepper. Heat a frying pan, add a little oil and brown lamb for 1 minute on each side.
- Transfer lamb to an oven pan and surround with tomatoes seasoned with salt and pepper. Bake for 10 minutes, then remove to rest and keep warm for 5 minutes.
- At the same time, place frozen kumara chips or wedges in another oven pan. Bake for 15 minutes until golden brown and hot. Serve beside lamb and tomatoes.
